INGREDIENTS (Serves 4)
– 2 Cornish hens (1.5–2 lbs each)
– 2 tsp kosher salt
– 1 tsp black pepper
– 1 tsp smoked paprika
– 1 tsp garlic powder
– 1 orange, sliced
– 1 lemon, sliced
– 6 garlic cloves, smashed
– 6 thyme sprigs
– 4 rosemary sprigs
Honey-Citrus Glaze:
– ⅓ cup honey
– 2 tbsp olive oil
– 1 tbsp soy sauce
– Zest of 1 orange
– 2 tbsp fresh orange juice
– 1 tbsp Dijon mustard
– ½ tsp black pepper
INSTRUCTIONS
1. Preheat oven to 400°F (205°C).
2. Pat hens dry and season with salt, pepper, paprika, and garlic powder.
3. Stuff each hen with herbs and citrus slices. Tie legs with kitchen twine.
4. Mix glaze ingredients until smooth.
5. Place hens on rack over a sheet pan. Brush with glaze.
6. Roast 45–55 minutes, brushing again halfway through.
7. Broil 1–2 minutes to finish with lacquered golden skin.
8. Rest 10 minutes before serving.
