    Ingredients

    Base:

    • 2 tablespoons olive oil

    • 1 large onion, chopped

    • 1 green bell pepper, chopped

    • 3 cloves garlic, minced

    • 2 pounds ground beef (or turkey)

    Spices and Seasoning:

    • 2 tablespoons chili powder

    • 1 tablespoon ground cumin

    • 1 teaspoon smoked paprika

    • 1 teaspoon dried oregano

    • Salt and black pepper, to taste

    Tomatoes and Beans:

    • 1 (28-ounce) can crushed tomatoes

    • 1 (15-ounce) can diced tomatoes

    • 2 (15-ounce) cans kidney beans, drained and rinsed

    • 1 cup beef broth

    Optional Garnishes:

    • Sour cream, shredded cheddar cheese, chopped cilantro, diced jalapeños

    Directions

    1. Heat olive oil in a large pot over medium heat. Add onion and bell pepper; cook until softened, about 5 minutes.

    2. Add garlic and ground beef. Cook until the beef is browned and no longer pink, breaking it apart with a spoon.

    3. Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Cook 1–2 minutes to bloom the spices.

    4. Add crushed tomatoes, diced tomatoes, beans, and broth. Stir to combine and bring to a simmer.

    5. Reduce heat to low and simmer uncovered for 45 minutes, stirring occasionally, until thickened and flavorful.

    6. Taste and adjust seasoning as needed. Serve hot, topped with your favorite garnishes.

    Chef’s Tips

    • For extra depth, add a tablespoon of tomato paste when browning the beef.

    • Add a small square of dark chocolate near the end for richness.

    • Make it ahead — chili tastes even better the next day as the flavors meld.
