    Ingredients

    For the Salad:

    • 7 oz (200g) halloumi cheese, sliced ½-inch thick

    • 4 cups mixed greens (arugula, baby spinach, or romaine)

    • 1 cup cherry tomatoes, halved

    • ½ cucumber, sliced into ribbons or half-moons

    • ¼ red onion, thinly sliced

    • ¼ cup kalamata olives, pitted

    • Fresh mint leaves (optional, for garnish)

    For the Lemon-Herb Dressing:

    • 3 tablespoons olive oil

    • 1 tablespoon fresh lemon juice

    • 1 teaspoon honey or maple syrup

    • ½ teaspoon Dijon mustard

    • 1 teaspoon dried oregano (or fresh, finely chopped)

    • Salt and black pepper, to taste

    Directions

    1. Heat a non-stick grill pan over medium-high heat. Lightly brush halloumi slices with olive oil. Grill 2–3 minutes per side until golden brown with grill marks. Set aside to cool slightly.

    2. In a large bowl, combine mixed greens, tomatoes, cucumber, red onion, and olives. Toss gently.

    3. Whisk olive oil, lemon juice, honey, Dijon mustard, oregano, salt, and pepper in a small bowl until emulsified.

    4. Drizzle half the dressing over the salad and toss lightly. Arrange grilled halloumi slices on top. Finish with mint leaves and the remaining dressing.

    5. Enjoy immediately while the halloumi is warm and slightly crisp.

    Chef’s Tips

    • Swap lemon for lime for a brighter flavor twist.

    • Add roasted chickpeas or quinoa for extra protein.

    • Halloumi is best served warm — it hardens as it cools.
