Quick Facts
• Prep Time: 10 minutes
• Cook Time: 15 minutes
• Total Time: 25 minutes
• Servings: 4 (makes about 8 pancakes)
InDry Ingredients:
• 1 cup all-purpose flour
• ¼ cup unsweetened cocoa powder
• 2 tablespoons sugar
• 2 teaspoons baking powder
• ¼ teaspoon baking soda
• ¼ teaspoon salt
Wet Ingredients:
• 1 cup milk
• 1 large egg
• 2 tablespoons melted butter (plus more for cooking)
• 1 teaspoon vanilla extract
Add-Ins:
• ½ cup semisweet chocolate chips
• (Optional) ¼ cup mini chocolate chips for topping
Directions
1. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
2. In a separate bowl, whisk milk, egg, melted butter, and vanilla extract.
3. Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix — lumps are fine! Fold in chocolate chips.
4. Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter. Pour ¼ cup batter per pancake and cook until bubbles form on top (about 2 minutes). Flip and cook another 1–2 minutes until fluffy and cooked through.
5. Stack high and top with chocolate syrup, butter, or fresh berries for a perfect finish.
Chef’s Tips
• Add espresso powder (½ teaspoon) for a mocha twist.
• Substitute buttermilk for extra fluffiness.
• For “lava-style” pancakes, push a few chocolate chunks into the center before flipping.
