AUTHENTIC TIRAMISU

INGREDIENTS
Cream Layer:
– 5 large egg yolks
– 3/4 cup sugar
– 1 cup heavy cream
– 1 cup mascarpone cheese, softened
Coffee Layer:
– 1 3/4 cups strong brewed espresso or dark coffee, cooled
– 3 tbsp coffee liqueur (optional)
Assembly:
– 2 packages ladyfingers (about 40–45)
– Unsweetened cocoa powder for dusting
– Dark chocolate shavings (optional)
DIRECTIONS
1. In a heatproof bowl, whisk egg yolks and sugar. Place over a simmering pot (double boiler) and whisk 8–10 minutes until thick and pale. Remove from heat and cool.
2. In another bowl, beat cream until stiff peaks form.
3. Gently fold mascarpone into cooled yolk mixture.
4. Fold whipped cream into mascarpone mixture until smooth and airy.
5. Combine espresso and liqueur in a shallow dish.
6. Dip ladyfingers quickly (1 second each side) and arrange in a single layer in a 9×13 dish.
7. Spread half the cream mixture over the ladyfingers.
8. Add a second dipped-ladyfinger layer.
9. Spread the remaining cream over the top.
10. Cover and chill 4–6 hours (overnight is best).
11. Dust heavily with cocoa powder before serving and add chocolate shavings if desired.
