APPLE PIE

INGREDIENTS
– 2 1/2 cups all-purpose flour
– 1 tsp salt
– 1 cup cold unsalted butter, cubed
– 6–8 tbsp ice water
– 6 cups thinly sliced apples (Honeycrisp or Granny Smith)
– 3/4 cup sugar
– 2 tbsp all-purpose flour
– 1 tsp cinnamon
– 1/4 tsp nutmeg
– 1 tbsp lemon juice
– 2 tbsp butter, cut into small pieces (for topping)
– 1 egg (for egg wash)
DIRECTIONS
1. In a large bowl, combine flour and salt. Cut in butter until coarse crumbs form. Add ice water, 1 tbsp at a time, mixing until dough comes together. Divide in half, wrap, and chill 1 hour.
2. Preheat oven to 425°F (218°C).
3. In another bowl, combine apples, sugar, flour, cinnamon, nutmeg, and lemon juice. Toss well.
4. Roll out one half of dough and place into a 9-inch pie pan.
5. Pour in apple filling and dot with small pieces of butter.
6. Roll out remaining dough and place over filling. Seal edges and cut slits for steam.
7. Brush crust with egg wash.
8. Bake 15 minutes at 425°F, then reduce heat to 350°F and bake 40–45 minutes until golden.
9. Cool at least 2 hours before slicing.
