Ingredients
- 1¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1½ tsp baking powder
- 1½ tsp baking soda
- 1 tsp salt
- 2 large eggs (room temperature)
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water or hot coffee
Directions
1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
3. Add the eggs, milk, vegetable oil, and vanilla. Mix on medium speed for 2 minutes.
4. Slowly pour in the boiling water or hot coffee. The batter will be thin — this is correct.
5. Divide the batter evenly between the prepared pans.
6. Bake 28–32 minutes or until a toothpick inserted in the center comes out clean.
7. Cool the cakes in the pans for 10 minutes, then remove and let cool completely before frosting.
