Classic New York Cheesecake
Ingredients
Crust
• 1 ½ cups graham cracker crumbs
• ¼ cup granulated sugar
• 6 tbsp melted unsalted butter
• Pinch of salt
Filling
• 4 (8-oz) blocks cream cheese, softened
• 1 cup granulated sugar
• 1 cup sour cream, room temperature
• 1 tbsp fresh lemon juice
• 1 tbsp vanilla extract
• 3 large eggs, room temperature
Optional Topping
• Fresh berries
• Warm berry compote
• Whipped cream
Instructions
1. Preheat oven to 325°F (163°C). Mix graham crumbs, sugar, butter, and salt. Press into 9-inch springform pan. Bake 10 minutes.
2. Beat cream cheese until smooth. Add sugar, sour cream, lemon juice, and vanilla. Add eggs one at a time on low speed.
3. Wrap springform pan in foil. Place in roasting pan and add hot water halfway up the sides. Bake 70–85 minutes.
4. Turn oven off and cool inside 1 hour. Refrigerate at least 6 hours or overnight.
5. Slice with a hot knife and serve with berries or whipped cream.
